Fit Mama Monday – More classes & light suppers


I’ll be teaching a number of additional classes this and next month to help out my fellow Pilates instructors as they take their summer vacations.  Mark your calendars to get in a few extra classes!  Drop-ins are available at both of these locations:

I’ve been struggling with finding the motivation to cook on these warm summer days.  It seem like being in the kitchen feels like my absolute last priority.  I’d rather be out biking with my kids or enjoying some time with friends on the back deck.  Tonight I managed to pull off something delicious despite having very little in the fridge and no energy in my creative cooking “tank.”  I threw last night’s leftover tilapia filets in a bowl with minced red onion, egg, fresh dill, oat flour, oats, the juice of one lemon, salt, pepper, grain mustard, and hot sauce.  A mish here and a mash there and a few minutes on each side in a sauté pan and voila!  Lemon Dill Fish Cakes.  Asparagus tossed with olive oil, salt and pepper roasted in the oven for 10 minutes made the perfect accompaniment, along with a few dots of mayo mixed with sriracha and little slices of avocado on top.  Light and perfectly filling.
